Azayaka matcha is mainly produced in Kyoto Prefecture, Aichi Prefecture, and Shizuoka Prefecture. Uji City in Kyoto Prefecture and Nishio City in Aichi Prefecture are traditionally famous for matcha production. Matcha is made by carefully selecting and preparing matcha leaves during the careful picking and production process. The hard work of tea fields has brought a delicate taste and aroma that other teas cannot match. More and more organically grown matcha has obtained the “Organic JAS System” certification equivalent to international standards.
